This allows a wider range of compatible versions. Also, python 3.7 is no longer supported (End Of Life).

More specifically, the importlib-metadata pin is causing trouble when coupled with opentelemetry.

Hi @jonapich, thanks for the PR!

We don't have validation for the poetry.lock file, yet. To avoid https://blog.phylum.io/bad-beat-poetry/, I have opened #127. This allows us to keep full control of the lock file.
