Dipper and Mabel Pines

Dipper

• He can play the sousaphone.
• If his drawings in Journal 3 are any indication, Dipper is actually a pretty talented artist. He also sketched a very intricate drawing of Grunkle Stan in Gravity Falls: Dipper and Mabel's Guide to Mystery and Nonstop Fun!.
• It isn't explored much, but Dipper has a notable affinity and finesse for video games. He beats Wendy at an arcade game called Fight Fighters in the episode of the same name, and he's shown intently playing a handheld game in "Tourist Trapped" during the How We Got Here montage. In Gravity Falls: Dipper's and Mabel's Guide to Mystery and Nonstop Fun!, he includes a Tiger Fist arcade game in his "ultimate hideout".

Mabel

• Alex Hirsch has stated in an interview that this was the reason for having her pick the grappling hook from the gift shop in the first episode: to show that Mabel, in addition to loving boys, sweaters, and pink, is more than willing to take a "crazy Batman gadget" when she gets the chance.
• Being boy-crazy, Mabel has a long list of crushes, including Xyler and Craz, a pair of Totally Radical dudes from her favorite movie, Dream Boy High. In addition to being pretty, they have law degrees and can quote Jean-Paul Sartre. Considering they're her idea of the perfect boys, Mabel has very high standards. On that same note, considering that both the Dream Boys and the Judge cat quote philosophical lines, this implies that Mabel is a very philosophical person.
• In both "Scary-oke" and "Into the Bunker", Mabel's sweaters light up and in the former, play music. Because she hand knits all of the sweaters seen on the show, Mabel also seems to possess skills in electrical wiring, sound machinery and safely installing them in knitted garments.

"Grunkle" Stan Pines

• Despite being considered an idiot by his parents and teachers, he was able to secretly repair Ford's dimensional portal by himself with nothing but his brother's journals to aid him.

Jesus "Soos" Alzamirano Ramirez

• One of the cryptograms in the online game Rumble's Revenge states that he knows more than he lets on. Bill Cipher, after he and the twins defeat him, outright states this about him.

Wendy Blerble Corduroy

• She's normally very passive, though she can be quite insightful. She's also very opinionated when it comes to the music industry, believing groups like Sev'ral Timez to be vapid, meaningless cash-grabs.
• She also may be more ambitious than expected. When Alex was asked which character would be into which Hogwarts house, Wendy would be sorted into Slytherin. Whether or not Alex was being serious is a different matter, though.

Bill Cipher

• Who would have thought an ancient, extra-dimensional nightmare liked playing piano and singing?
• At some point, he had a family, and the Nightmare Realm isn't his home dimension — the Second Dimension is. But, as Bill puts it "flat minds in a flat world with flat dreams"; it's expressed that the stiflingly static nature of the dimension drove him to madness, and he obliterated it in turn.

Bud Gleeful

• This is a very minor example, but it says something about Bud Gleeful that he never used his connections in the Society of the Blind Eye to Gideon's advantage. Sure, the Society isn't exactly noble, but Bud didn't see it that way.

The Gnomes

• In Gravity Falls: Legend of the Gnome Gemulets, Shmebulock reads philosophical books.

Ghost Eyes

• Ghost Eyes may be a violent and seemingly simple-minded thug, but he also majored in philosophy. Also seems to really enjoy the friendship bracelet classes.

Bill's Henchmaniacs

• Paci-Fire is apparently smart enough to have some knowledge of the rift, sadly his scene was scrapped, forcing Bill to get the information from Ford instead.
• Pyronica is apparently well-versed enough in quantum mechanics for Bill to make mention of it.

Sheriff Daryl Blubs and Deputy Edwin Durland

• Durland has an eloquent existential crisis at the end of "Dungeons, Dungeons, and More Dungeons," though Blubs quickly snaps him out of it.

Manly Dan Corduroy

• A huge fan of the boy band Sev'ral Timez. Also enjoys quiet pancake breakfasts in the diner with his daughter.

Tyler Cutebiker

• Turns out to be a pretty effective mayor, which is no small feat given what a Weirdness Magnet the town generally is.

Mr. Poolcheck

• He's surprisingly good at Irish stepdance, as seen in "Scary-oke".

Pacifica Elise Northwest

• A legitimately skilled mini-golfer with a global rank and has- had a gold-medal winning trainer.
• She gets so much more in "Northwest Mansion Mystery". She shows a desire to embrace her own preferences over what her parents have chosen for her, only being kept from doing so by her own fear of them. Not to mention that when she discovers just how twisted her family history really is, she is disgusted by it.
• According to Alex Hirsch, "Pacifica is a very insecure person."
• An Easter egg from Lost Legends reveals Pacifica is a skilled player of an online shooter called Bloodcraft: Overdeath, has a weakness for puns, and secretly loves deep-fried foods.

Robbie Stacey Valentino

• "The Time Traveler's Pig" does a good job of showing him as a nervous teen trying to admit his feelings to someone he likes.

Thompson

• In the shorts between the episodes, we see that Thompson is a strict and neurotic manager of the local theater, banning the Pines family simply for accidentally bringing in "outside food or drink" (a single candy bar).

Tate

• Lost Legends also has a file on Old Man McGucket's son Tate, who is secretly a mathematics prodigy able to accurately predict weather patterns, stock market trends, and even lottery numbers.

Xyler Q. Blaze and Craz Zazzler

• Upon faced with their sudden material existence and the horrors of Bill's "Weirdmageddon", Xyler has a brief moment of intellectual clarity. Considering they're her idea of perfect boys, it says something about Mabel's standards.
  Xyler: Are we real? Is this reality? Jean-Paul Sartre postulated that every existing thing is born without reason, prolongs itself out of weakness, and dies by chance.
  Craz: Totally righteous, bro!
  Xyler: I knoooow!
