This PR addresses matplotlib/matplotlib#26143 by making the math symbol tables in the documentation dynamically resize up to 6 columns, instead of using hardcoded values.

All symbol table categories now use up to 6 columns, or fewer if there are fewer symbols.

This makes the documentation easier to maintain and more robust to future changes

Thank you for your interest in contributing to Matplotlib. However, we already have #30105 for this issue, which I think is a more complete solution.
