Summary

As part of #2047, Mockito 5.19.1-SNAPSHOT was installed as a SNAPSHOT version which is acceptable for a test dependency. This was required to due a bug in GraalVM support of Mockito – the fix unblock the PR mentioned above (related Mockito issue: mockito/mockito#3709).

This issue tracks removing the SNAPSHOT version again in favor of a stable release. This issue is marked intentionally on hold to be revisited later once Mockito 5.19.1 is released.

Why is this needed?

We shouldn't rely on dependency SNAPSHOT versions on the long term.
